These machines are equipped with a double alternative blades system that enables a perfect smoked salmon’s filet slicing at a high output (90 and 180 slices/minute). You can modify the cutting angle (from 8 to 20°) and the slice’s thickness (from 2 to 20 mm) while the machine is running.
